Cheeseburger Salad

Print Recipe Posted by Ree in Beef, Salads

TPW_9517My gosh, is this ever good. All the goodness of a juicy cheeseburger in salad form. It?s similar to a taco salad, in that it has a bunch of meat, cheese, and tomato on top of lettuce. But this is?different. It?s crazy, crazy good. You?ll want to eat the meat mixture alone right out of the skillet. You?ll wonder where it?s been all your life.

(I think it?s the pickles. Try it and see if you agree with me.)

Here?s how I make it. You?ll absolutely fall in love with it.

(Note: This recipe is adapted from this recipe on The Pampered Chef, which happens to make three of my most favorite cooking tools in the world. More on this another day.)

(This is not a paid advertisement for Pampered Chef products. Over and out and amen.)

TPW_9407The Cast of Characters: Ground beef, ketchup, yellow mustard, Dijon mustard, barbecue sauce (not shown because I?m a dork), Roma tomatoes (not shown, see note on barbecue sauce), cheddar cheese, hamburger or hot dog buns, butter, and Romaine lettuce.

TPW_9430Brown the ground beef, then drain off the fat and squirt in some ketchup.

Did you know ketchup is way underrated as an ingredient rather than a condiment?

Make this. You?ll see.

TPW_9431Squirt in some mustard?

TPW_9433Some Dijon or grainy mustard?

TPW_9436And some barbecue sauce. Then stir this together and take yourself a little bite.

Delightfully sticky, sweet, weird, and wonderful.

TPW_9408Keep the meat warm, then grab some hamburger buns. Or you can grab some hot dog buns and pretend they?re hamburger buns.

TPW_9409Split them in half lengthwise, then slice them lengthwise a couple more times.

TPW_9411Then cut them in the opposite direction to create about a 1-inch dice. These?ll be the croutons!

They?ll also change your life.

TPW_9466Throw them in a skillet over medium-low heat with 1/4 stick of butter. Toss them around and cook them for the next 10 minutes or so, adding another 1/4 stick of butter every few minutes until you?ve added (and tossed in) 1 stick. Adding the butter gradually like this helps the croutons absorb them more evenly.

My word, are these croutons good.

TPW_9481Next up, grab some dill pickle spears and chop ?em into large chunks.

My mouth squirted just looking at this photo. Just thought I?d share.

TPW_9483Grate a bunch of cheddar cheese?

TPW_9484Slice up some red onion?

TPW_9512And dice up some juicy, red tomato.

TPW_9513Oh, and you might want to tear up some lettuce?considering this is a salad and all.

TPW_9514Now just assemble the salads! Mound some lettuce on each plate, then pile on some of the meat mixture and some of the grated cheese.

TPW_9518Then add plenty of pickle chunks, diced tomato, sliced red onion, and lots of the buttery, toasty croutons.

TPW_9522This is absolutely, positively delicious. I think I?d choose it over taco salad. Please don?t tell taco salads I said that.

I?m not here to hurt anyone?s feelings.

TPW_9525Try it soon, guys?I promise you?ll love it. (Be sure to load on extra pickles. They make the salad, baby.)

Here?s the handy dandy printable.

| | |

Ingredients

  • 2 pounds Ground Beef
  • 1/3 cup Ketchup
  • 1 teaspoon Yellow Mustard
  • 1 Tablespoon Dijon Or Spicy Mustard
  • 2 Tablespoons Barbecue Sauce
  • 2 heads Romaine Or Green-Leaf Lettuce, Torn
  • 8 whole Dill Pickle Spears, Cubed
  • 4 whole Roma Tomatoes, Diced
  • 1 cup Grated Sharp Cheddar Cheese
  • 1 whole Red Onion, Sliced
  • 4 whole Hamburger Buns
  • 1 stick Butter

Preparation Instructions

(Adapted from The Pampered Chef.)

Brown meat in a large skillet, then remove from heat and drain off the fat. Add ketchup, mustards, and barbecue sauce to the meat and stir to combine. Taste and add more of whatever you think it needs. Keep warm.

Cut hamburger buns into 1-inch cubes. Melt 1/4 stick butter in a separate skillet, then add the bread cubes and toss to coat. Toast the croutons in the skillet over low heat for about 10 -12 minutes, adding 1/4 stick of butter every couple of minutes until you've used the whole stick. (This will ensure all the croutons soak up the butter and toast nicely.)

To assemble each salad, pile torn lettuce on a plate. Pile on a good quantity of the meat mixture, then top with plenty of grated cheddar. Add diced tomato, chunks of pickles, and slices of red onion over the top, then sprinkle warm croutons all around the plate.

Serve immediately. Yum yum yum!

Spicy Whiskey BBQ Sliders

Print Recipe Posted by Ree in All PW Recipes, Appetizers, Beef, Super Bowl

TPW_8492Are you having a New Year?s Eve get together at your house? If so, I must urge you to strongly consider making these decadent, drippy, diminutive, dreamy, and divine sliders. I made them just before Christmas and when I took my first bite, I actually heard angels singing.

They?re positively out of this world.

Here. Let me prove it to you.

TPW_8387The Cast of Characters: ground meat, salt & pepper, butter, onion, whiskey (not pictured because I didn?t think to add it until I was in the middle of cooking the sauce), jarred jalapenos, and small buns/rolls.

TPW_8392You can use ground beef, ground turkey, or?guess what this is? Bison! Don?t tell my cattle ranching friends.

Or my cattle ranching family.

A girl?s gotta experiment from time to time, man.

TPW_8393Form the meat into small patties (about 12) then sprinkle them generously with salt and pepper.

TPW_8397Fry them in two batches in a skillet of melted butter over medium to medium-high heat. You want them to be almost done in the middle without totally burning/blackening on the outside.

TPW_8400Mmmm. Look at that beautiful spatter. It?s the stuff that messes were made of.

TPW_8414After all the patties are cooked, remove them to a plate.

TPW_8422Now you?ve got a skillet of butter and grease and flavor, which is wonderful?

TPW_8424But we don?t need all of it. Pour off all but about 2 tablespoons of the grease.

TPW_8426Then throw in the diced onions and stir them around to cook them for a couple of minutes.

TPW_8427Wouldja LOOK at that BEAUTIFUL skillet full of FLAVOR?

TPW_8436I was going to add the barbecue sauce right off the bat, but I decided to go with whiskey first.

TPW_8437Stir the whiskey around to deglaze the pan and let it cook and bubble and reduce for 3 to 4 minutes, or until it?s reduced by about half.

TPW_8444Then grab some jarred jalapenos?

TPW_8446And throw them into the skillet. I started with a small amount but wound up working my way up to about 1/4 cup. You need at least that much to really taste the spice in the end.

TPW_8448Next, pour in the barbecue sauce, stir it around, and reduce the heat to low.

Your kitchen smells really, really good right now.

TPW_8453Next, return the patties to the skillet?

TPW_8455

TPW_8461Flip them over to coat?

TPW_8458And be sure to pour any juices that were left on the plate right on into the skillet.

Flavor, baby. Flavor.

TPW_8463Now just let ?em simmer in the sauce for several minutes. If there?s any pink left in the patties, it?ll cook right off and everything will be right with the world.

You can not imagine how good this smells.

TPW_8466Okay, so I went a little heavy on the butter. But life is nothing but a nice, long series of learning experiences.

Grill the buns on a skillet or griddle until they?re nice and golden and slightly crisp on the surface?

TPW_8478Then retrieve individual patties?

TPW_8479And put them on the buns.

TPW_8480Garshk. I?m just going to sit here and stare for a minute.

TPW_8484When you?ve got the buns loaded up, spoon extra sauce all over the tops of each one. You want to get that onion/jalapeno chunkiness on each slider.

TPW_8492Top ?em with the other half of the buns and serve ?em up to your guests.

Warning: If you decide to have a New Year?s Eve get together?

And you decide to serve these sliders?

You will be expected to have a New Year?s Eve get together every year for the rest of your life?

Whether you want to or not.

I?ll let you make the call. I just wanted you to be informed.

Enjoy these, guys!

Ingredients

  • 2 pounds Ground Meat (beef, Bison, Turkey)
  • Salt And Pepper
  • 4 Tablespoons Butter
  • 1 whole Large Onion, Diced
  • 1/2 cup Whiskey
  • 1 cup Barbecue Sauce
  • 1/4 cup Jarred Jalapeno Slices (more To Taste)
  • 12 whole Slider Buns Or Dinner Rolls, Split

Preparation Instructions

Form the meat into 12 (or so) miniature patties and salt and pepper them on both sides. Melt the butter in a skillet over medium-high heat and cook the patties until just about done in the middle, approximately 3-4 minutes per side. Remove the patties from the skillet and set aside. Drain off all but 2 tablespoons of grease, then return the skillet to the stove.

Throw the diced onions in the skillet and stir to cook, about 3 minutes. Pour in whiskey (be careful if you're cooking over an open flame; turn it off momentarily to be extra careful) and stir. Allow the whiskey to reduce by half, about 2 to 3 minutes, then stir in jalapenos and the barbecue sauce.

Reduce the heat to low and place the patties in the barbecue sauce, turning to coat. Allow the patties to simmer in the sauce until everything's hot and bubbly.

Place the patties on individual buns and be sure to spoon extra sauce (with the jalapenos!) over the top of each one before topping with the other half of the bun.

Perfect New Year's Eve treat!

Review of Two Combination Microwave Ovens

The Panasonic NN-CF778SBPQ Combination Microwave oven is a well made, durable and reliable oven, which although at the higher end of the microwave price range is well worth the money. Unlike most combi - micros it does not have a turn table, meaning that you can actually fit more in. The oven can be used for all cooking methods from roasting and baking to steaming, as well as defrosting and grilling and gives perfect results every time.

There is a full temperature range of 100C-250C, and combination cooking can reduce the cooking times by half to two thirds, depending on the food. The door opens downwards and forms a very useful ledge on which to rest any dishes either before or after cooking. This model also comes with energy saving functions: it reduces energy consumption when not operating, in addition to energy saving advantages common to all inverter ovens. When using combination (micro + convention) programmes you can use the supplied metal oven shelf and if only using it as a conventional fan oven cooking can be done on two levels. The quartz grill doesn't need any pre-heating so is much more economical than a conventional grill, especially if you just want to quickly brown the top of a shepherds' pie or grill a piece of fish for a few minutes.

Make sure you work out where you are going to position your NN-CF778SBPQ microwave as it has vents on both sides of the machine that must have space between them and adjacent walls, cupboards etc. The oven comes with instruction and recipe book, square enamel shelf, square wire shelf, square glass tray and anti spark ring.

The Sharp R959SLM combination microwave oven offers a wide range of cooking options, combining microwave, convection and grill. This amazing oven allows you to bake grill roast just as you would in a standard oven, but considerably faster. This is a high quality and very stylish combination oven.
The R959SLM has a huge 40 litre capacity and is large enough to cater for any occasion, including cooking a full Christmas dinner! This is made possible by the two shelves that allows you to cook a multitude of dishes and is great if you do ‘batch’ baking. You can even use this oven to ‘prove’ bread as it has a 40 degree setting on its convection oven mode specifically for this purpose.

The quartz grill heats up very quickly and is fast and safe to use, giving great results. It features a double grill function that’s perfect for crisp pizzas straight from frozen. It is easy to clean too!
You can pre-programme up to three different cooking combinations. For example; full micro 20mins followed by combi micro/convection 25mins followed by grill/micro 55mins etc. You can use this feature with any combination of cooking/time. The oven has eco features including the power save standby and the very quick preheat which is much faster than a standard oven.
Be aware, though, this is quite a large piece of equipment and is very heavy. Make sure that you measure carefully before you purchase to make sure you have the room for this imposing appliance.
All round the Sharp R959SLM combination microwave oven is an marvellous piece of kitchen equipment and could be used to replace the conventional oven in many households. You can cook everything in it that you would put in a 'normal' oven - only faster, cleaner and much more conveniently. Instruction booklet, turntable and 2 shelves are included.

Critique of Three Solo Microwave Ovens

Solo Microwaves are basic microwave ovens that are ideal for small families who have light usage. Daewoo, Sanyo and Sharp all manufacture these sorts of microwaves and this article checks out the characteristics of these basic microwave cookers.

The Daewoo KOR6N9RR is a spectacular retro designed microwave cooker. It is small in looks but readily takes a dinner plate within its 20 litre capacity. The oven has a convincing 800 watt output and user friendly controls, for the 5 power levels, auto cook, one touch menus and auto-defrost. There's extra elements of a child safety lock and a kitchen timer.
The Daewoo Solo oven operates a conclave reflector system that ensures even cooking results. The classy design can be matched with other kitchen appliances in the range, for example a kettle and toaster to offer a coordinated look to your kitchen.
The solitary concern with this efficient microwave oven appears to be the rather 'tinny' effect and the noise and vibration which seem to detract from the all-around good evaluation of this appliance. Overall, though a striking, popular and efficient microwave cooker. The package includes an user guide, turn-table and warranty card. This microwave oven comes in purple, black and red.

The SanyoEM-S2297V is a middle rank basic microwave at a terrific price. It is stylishly designed with black mirror finish and silver and in spite of the little size has a 17 litre interior space that can comfortably hold a dinner plate.
The microwave oven is touch controlled with 10 powerlevels and has 700 watts of power. An additional aspect is the 'weight and speed' defrost setting. This microwave cooker has enough features to give you thorough management of your cookery without overwhelming the operation with intricate settings.

The SanyoEM-S2297V has a bright clock and timer and first-class inside light and is muted and smooth in operation. A child lock affords an further safety feature. This microwave is extremely lightweight and whilst this is a satisfactory feature when moving it round, it frequently causes troubles on polished worktops as the cooker may move as the door is opened.
Though perhaps overly small for a large family or strenuous use this microwave is excellent for single folk or families with lighter use.

The Sharp R270SLM 20ltr Solo Microwave in Silver is a compact and stylish oven that is excellent for small families or couples. It has a 20 litre capacity and comfortably takes a normal sized plate. It has 10 power settings with 8 auto-cook menus and 3 express cook menus. There are additionally 2 defrost functions.

The Sharp R270SLM is a standard microwave oven that looks great in your kitchen and does what it says on the can! There's no clock, but this isn't usually a difficulty with so many kitchen machines having a clock nowadays.

It is light and this might be a problem on a number of shiny  surfaces since it could move along a big when opening the door. The controls are easy to use and cleaning is easy with no messy difficult toaccess places. Overall a goodserviceable basic microwave oven. The Sharp Solo Microwave is also for sale in White.
